Spiced Applesauce Cake with Cream Cheese Frosting
- 1 cup granulated sugar
- 1 cup vegetable oil
- 1 cup apple sauce or apple butter
- 1 large egg(homemade is best!)
- 1 teaspoon ground nutmeg
- 2 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon salted butter
Heat oven to 350° F. In large bowl, sales mix sugar, help applesauce, advice or apple-butter, oil and egg until well blended. In medium bowl sift together flour, cinnamon, nutmeg and baking soda. Add dry mixture to wet; do not overmix. Grease two 8″ cake pans with butter. Pour batter into pans. Bake 40 to 45 minutes or until toothpick inserted in center of each cake comes out clean. Cool completely on rack.
For the Cream Cheese Frosting
- 12 ounces cream cheese
- 4 cups powdered sugar(at room temperature)
- 2 teaspoons vanilla extract
- 1/2 cup (1 stick) unsalted butter
Beat cream cheese and butter together until well blended. Add sugar 1 cup at a time, beating after each addition. When smooth, add vanilla and blend.

Powdered sugar, optional
Place one cake on serving platter. Frost top with Cream Cheese Frosting, allowing frosting to drip down sides. Sprinkle with brown sugar, if desired. Place second cake on top of frosting. Sift powdered sugar over top of cake, if desired. Slice and serve.
